FAQs

Should you beat eggs before adding to cake mix? ›

Martina says, “Late in the mixing stage, eggs will incorporate better if you lightly beat them before adding to the batter. The finished cake may be slightly shorter than expected, but its flavor and tenderness shouldn't be affected.” For egg-leavened cakes, the eggs are crucial.

What does adding an extra egg to cake mix do? ›

Add an Extra Egg

Most cake mixes call for two to three eggs. Just one more egg will add extra moisture, fat, and a little protein, which means the cake will be softer and less likely to overbake and dry out in the oven.

What does adding pudding to cake mix do? ›

Put some pudding in the mix: Add a small box of pudding mix in with the cake mix. (Don't make the pudding.) The mix adds additional flavor, moistness, and a denser texture.

How do you make a box cake moist and dense? ›

On their own, boxed cake mixes have a structure that's loose and airy. But if you add ¼ cup flour or half a box of instant pudding mix, the texture of the cake becomes denser and tighter, ideal for a pound-cake-like consistency that will hold the shape of a Bundt pan.

Should I add an extra egg to box cake mix? ›

Boxed cake mixes tend to be lighter in consistency, but if you're craving that thicker, moister, denser cake, then all you have to do is add an extra egg to your mix. The additional fat in the egg yolk helps create a more tender and moist cake that is full of flavor.

What happens if you use one less egg in cake mix? ›

If there isn't enough egg, your batter or dough may not be able to hold its structure or could end up overly dry or dense. On the other hand, if there is too much egg, your baked goods could lose their shape due to excess liquid, or have a rubbery (or even overly cakey) texture depending on the recipe.

Should eggs be at room temp for boxed cake mix? ›

You should store your eggs in the fridge, but when it comes time to bake it's usually best to take out the number you need and bring them to room temperature.

What happens if you put 2 eggs in a cake instead of 1? ›

Using too few eggs will make your desserts dense, but using too many will make them rubbery. The explanation for this lies in the fact that eggs are made up of protein. As Fine Cooking explains, when the protein in eggs combines with the protein in flour, they produce the overall structure of the baked good.

What if I only have 2 eggs for a cake mix? ›

One option is to use 2 eggs and add an extra 1/4 cup of liquid, such as milk or water, to make up for the missing egg. Another option is to use 2 eggs and add in 1/4 cup of unsweetened applesauce or mashed banana to add moisture and binding properties.

What happens if you use milk instead of water in a cake mix? ›

Yes, you can substitute milk for water when preparing SuperMoist cake mixes, however, the cake may be slightly drier than if prepared with water. Also keep in mind that milk will add calories and change the nutrition slightly.

Why add sour cream to boxed cake mix? ›

"It adds a subtle tang to the flavor or baked goods. The fat contributes to moistness and richness that makes tender cakes," says Samantha Seneviratne, author of The Joys of Baking: Recipes and Stories for a Sweet Life. What's the Difference Between Créme Fraîche and Sour Cream?

What ingredients contribute to the rich flavor of the cake? ›

It also helps to provide structure and moisture to cakes, cookies, and bread. In addition to its delicious taste, butter adds richness and flavor to your baked goods. Different types of butter are available, but salted and unsalted butter are the two most commonly used in baking.

Can you use margarine instead of oil in a cake mix? ›

You sure can. The good news is that butter, margarine, shortening and all types of oil can be used in place of the vegetable oil in SuperMoist package directions. There may be slight differences in texture and flavor, however all cakes will have good baking results.

How do you substitute butter for oil in cake mix? ›

It couldn't be easier to substitute butter for oil using a 1:1 ratio. This should work with olive, canola, vegetable, and coconut oils. Simply melt and cool the butter to room temperature, then continue with your recipe. (If the recipe calls for ½ cup oil, use ½ cup melted and cooled butter.)

How do you make a box cake rise higher? ›

To make a box cake mix rise higher, try using a smaller pan, adding an extra egg, using milk instead of water, adding baking powder, mixing for longer, using room temperature ingredients, baking at a higher temperature, or using cake strips.

How do I substitute sour cream in a cake mix? ›

To use as an alternative in baking, we recommend whole buttermilk over low or nonfat. You'll also want to use a bit less (about 75%, or 3/4 cup for every 1 cup of sour cream the recipe calls for).
