When you think of baked brie, you probably think of brie en croute! It’s a classic, retro appetizer that I love to make (check out this cute Halloween Baked Brie en Croute) but I don’t always have phyllo dough or puff pastry to make wrapped brie.

Frequently Asked Questions

Should I remove the rind?

No, the bloomy rind should not be removed, it’s what keeps the brie in! if you don’t like the taste of it, you can use a sharp knife to shave a bit of the top and bottom off of the brie wheel, and then eat around it once baked.

Can I make this recipe ahead of time?

This elegant appetizer can be prepped ahead of time. Just make the candied bacon topping and store it in the fridge. Bake the cheese right before serving.

Be prepared that the candied bacon topping with harden substantially over time. You may want to add extra maple syrup while gently reheating to help it loosen back up.

What should I bake this on?

You can choose to bake this on a baking sheet or sheet pan, but I would recommend lining it with aluminum foil for easy cleanup.

You can also use a small ceramic dish, I have also used a pie plate. The benefit of using a smaller ceramic dish is that you won’t need to transfer the baked brie to a serving platter.

Gooey baked brie topped with quick candied bacon. The perfect easy appetizer recipe!

  • 1 8-ounce brie wheel or wedge of brie

For the bacon topping:

  • ½ pound hickory smoked bacon, uncooked, diced
  • ¼ cup brown sugar

  2. In a large skillet, add diced bacon. Cook for 10-15 minutes until just barely crispy, stirring frequently.
  3. Drain grease from skillet. Return bacon to hot skillet, add brown sugar, rice wine vinegar, maple syrup, black pepper and optional cayenne and/or thyme.
  4. Simmer for 2-3 minutes until bubbly, stirring frequently.
  5. Line a baking tray or small ceramic dish with aluminum foil, then lightly spray foil with cooking spray.
  6. Add brie to baking tray, then top with candied bacon mixture.
  7. Bake for 10-12 minutes, or until brie is starting to become gooey inside but not runny.
  8. Allow to rest for about 10 minutes before digging in.

Notes

Bacon topping will be hard and crunchy, like hard candy or brittle.

FAQs

Do you eat baked brie with crackers? ›

Creamy, ooey, gooey baked brie is the ultimate recipe to make for entertaining! It takes less than 30 minutes to make and will instantly take any grazing board to the next level. It's tangy, savory and sweet all in one and makes for the perfect dip with crispy bread or crackers!

Why do people bake brie? ›

Like camembert, brie can be baked until the middle is melting and oozy, perfect for dunking in toasts or veg crudités. For a real showstopping starter, you could even bake a wheel into a loaf of bread, or use it to make an indulgent fondue.

Do you take the rind off brie before baking? ›

Brie rind is edible, and it actually adds nuance and complexity of flavor. In this baked brie recipe, I do not remove the rind because I need the surface to spread my jam and to add my beautiful nuts and toppings.

What is brie best paired with? ›

As mentioned, brie's mild, yet buttery and nutty flavor pairs well with so many things. Some examples are salami, prosciutto, pickles, apricots, apples, pears, dates, almonds, candied walnuts, and pecans.

Which jam goes with brie? ›

Brie cheese is the perfect partner to jam! It pairs beautifully with jam varieties, such as: fig, apricot, blackberry, boysenberry or cherry jam.

What cracker is best for brie? ›

Plain saltines, whole grain and multigrain crackers all complement Brie. The cap of a wheel is often removed ( but this is not necessary) and jams or chutneys with or without seeds or nuts are poured on top. A room temperature Brie is soft enough to spread on most crackers, so it becomes a matter of taste preference.

What kind of bread is best with brie cheese? ›

The French will traditionally serve Brie with baguette or another crusty bread that won't compete with the cheese. Plain crackers are another convenient choice that won't detract from the cheese.

What do the French eat with Brie? ›

If you want to serve cheese as the French do, you should serve it to your dinner guests as an individual course before your dessert. Doing this allows the Brie to have a moment in the spotlight. However, many people also serve Brie as an appetizer with fruit, meat, and crackers.

What meat goes with Brie? ›

Salumi (Fancy Word or Umbrella Term for the Vast Realm of Prepared Italian Meats)
  • Salami.
  • Salami Calabrese.
  • Soppressata.
  • Prosciutto.
  • Coppa.
  • Bresaola.
  • Pepperoni.

What do the French serve with Brie? ›

French people would often eat brie between the main dish and the dessert. If it's a fancy diner or a fancy lunch, it can be served among other types of cheese and you would eat it with a glass of red wine and maybe a little bit of cherry jam, probably on a piece of bread.

Should brie be heated before serving? ›

It's best if you serve it at room temperature or warm for the best taste and texture. Do you eat the coating on brie cheese? Yes! The rind on brie cheese is entirely safe to eat.

How do you present brie cheese on a charcuterie board? ›

Arrange the cheese on the board, you can precut it into tiny pie slices or cut and remove one as an example of the slices and to feature the ripeness of the cheese. Place strawberries, little clusters of grapes, figs, apple or pear slices around. Herbs or nuts also go well with Brie.

What is the etiquette for brie cheese? ›

When it comes to slicing Brie, you're traditionally told to avoid "pointing the cheese," or removing the tip (also referred to as the 'nose') of a brie wedge. This is essentially bad cheese etiquette, as you are meant to enjoy the full range of the Brie's flavor, from the center to rind.
