Favorite Brunch Recipes for Easter

The best thing about celebrating a holiday is spending time with people we love. The second best thing is the food – although, in this case, it’s a close second! Easter is the perfect occasion to enjoy your family and welcome spring with a delicious Easter breakfast or brunch.

Hosting a big Easter brunch is one of my favorite holiday traditions and something I look forward to every year.Whether we’re celebrating with friends, family or a mixture of both, we love to go all out with a big holiday spread.

This list of Easter breakfast-turned-lunch recipe ideas does not disappoint.   • Easy Breakfast Muffins. It takes so little to make these muffins and even less to clean up after.
  • Homemade Biscuits. Buttery, fluffy and rich is the only way to describe these biscuits.
  • Chocolate Chip Banana Bread Muffins. One of my all-time favorite loaf breads in individual servings.
  • The BEST Orange Sweet Rolls. I don’t use “best” lightly, and these are seriously deserving of the title.

For a light, fresh and healthy option, it’s always a good idea to have some sort of fresh fruit dish on the table as well as it is a quick breakfast idea to put together. Berries are a great option to include, as they are usually in season spring through summer.

Easy and delicious Easter brunch ideas that will please every guest on your list! One of my favorite Easter brunch recipes is this blueberry crepes recipe. The perfect dish to enjoy with your family and welcome spring.

Ingredients

Crepe Batter

  • 2 cups 2% milk
  • 4 large eggs
  • 3 Tablespoons salted butter , melted and slightly cooled
  • 1 Tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon fine sea salt or table salt
  • 1 ½ cups all-purpose flour , sifted if desired

Crepe Filling

  • 4 ounces cream cheese , softened
  • 2 Tablespoons granulated sugar , or powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup whipped cream

Blueberry Sauce

  • 1 ½ cups blueberries , fresh or frozen
  • cup granulated sugar
  • cup water
  • 1 ½ Tablespoon lemon juice
  • 1 teaspoon cornstarch

Instructions

Crepe Batter

  • In a blender, blend milk, eggs, butter, sugar, vanilla, salt, and flour, and mix until batter is smooth, about 15-20 seconds. Refrigerate batter at least 30 minutes, or overnight.

  • Heat an 8-inch frying pan over medium-low heat. Spray with non-stick cooking spray and pour about 1/4 cup batter into the pan, immediately tilting the pan from side to side to form an even circle. Cook about 1-2 minutes per side, or until lightly browned. Remove from heat and stack until ready to serve. Repeat with remaining batter.

Crepe Filling

  • In a stand mixer fitted with a paddle attachment, beat the cream cheese, sugar, and vanilla until smooth. Mix in the whipped cream until smooth.

Blueberry Sauce

  • In a medium saucepan, combine the blueberries, sugar, water, lemon juice, and cornstarch. Bring to a boil over medium heat.

  • Lower the heat and simmer 5 minutes, or until thickened. Mash with a fork to reach desired consistency. Remove from heat and allow to cool for a few minutes.

  • Lay a crepe on a flat surface and spread 1 to 2 Tablespoons filling down the center. Then pour the blueberry sauce on top. Fold crepe around filling. Repeat with remaining crepes. Fold crepe and serve.

Notes

Make ahead instructions: The batter can be made up to 24 hours in advance and stored in the refrigerator until ready to cook. The filling is best made the same day it is served. The crepes and sauce can be made up to 3 days in advance.

Storage: For the crepes, add to a zip-top bag or covered container and layer parchment in between each crepe. The crepes and sauce can be stored in the fridge for up to 3 days and in the freezer for up to 3 months.

Reheating: Heat in microwave or on the skillet over low heat until warm. You can also place on a baking sheet in the oven at 175°F for 5 minutes, or until warm.
